Step 1: Sourcing A2 Milk from Indigenous Cows
It all begins with pure A2 milk, obtained from healthy, desi cow breeds and these cows are:

Step 2: Setting the Curd
Fresh milk is boiled and cooled, then inoculated with a small amount of previous curd to begin the fermentation process. It’s left overnight to naturally set into curd.
This fermentation not only enhances probiotic properties but also ensures a smooth transformation into butter.
Step 3: Churning the Curd (Bilona Method)
The curd is then hand-churned using a wooden churner (called Bilona) in two directions—clockwise and anti-clockwise. This ancient method separates the butter from the buttermilk naturally.
The butter that rises is collected carefully.
The leftover buttermilk is often consumed or used in cooking—nothing is wasted.
This step is what gives Bilona ghee its richness and traditional texture.
Step 4: Heating the Butter
The churned butter is then slowly heated over a low flame in a thick-bottomed vessel. As it melts, the water evaporates, and the milk solids separate.
